One of the items on my Fall To-Do List was make Taco Tuesday a thing. There are a million ways to make a taco so you won’t get bored if you have this meal once a week. There are so many options when it comes to fillings and fixins! For my first official Taco Tuesday meal, I went the semi-homemade route:
You’ll Need:
- Small flour tortillas
- Rotisserie chicken (bonus if you can find the Latin spiced kind)
- Jar of corn salsa
- Pepperjack cheese (shredded)
- Avocado
- Sriracha ranch dressing (I got mine from Trader Joe’s, but I’m sure adding a little sriracha or hot sauce to regular ranch would do the trick.)
Assemble all of the above ingredients and enjoy! It sounds like a random mix of ingredients, but my beau ate 3 of them, so I’d say the recipe works.
FYI – find some of my other taco recipes here, here, and here.
